The famous “dum biryani” of Lucknow Straight from the Awadhi Nawabi kitchens, “Dum Pukht” literally translates as breathing life into food. The special technique employed in this cuisine includes using wide, heavy bottomed pans, sealing the pans with dough and cooking on slow fire. The flavours and aromas are sealed within the food, as it delicately imbibes the goodness of whole spices. The end result is truly magica.
